SECTION/RULE §281.17 - Standard Recipes

(a) A provider agency must plan and manage food production through the use of standardized recipes. These menus must be adjusted to yield the number of servings needed, provide consistency in quality of the food prepared, and maintain documented nutrient content of the food prepared.(b) A provider agency must keep documentation to show it has complied with the requirements for recipes, according to the terms of the contract.
