SECTION/RULE §748.1703 - What are the requirements for daily menus?

(a) You must maintain daily menus showing all meals and snacks that you prepare and serve.(b) You must document food substitutions on the menu. Food substitutions must be of comparable food value.(c) You must date menus and keep copies for 90 days.(d) This rule does not apply to meals prepared and served in cottage homes.
